On Rosh Hashana, we have the custom to eat apples and honey, so many bake honey cake as a delicious treat for the holiday. Try this recipe for the most delicious honey cake!
Ingredients:
3 ½ cups all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
½ teaspoon salt
4 teaspoons ground cinnamon
½ teaspoon ground cloves
½ teaspoon ground allspice
1 cup vegetable oil
1 cup honey
1 ½ cups sugar
½ cup brown sugar
3 eggs
1 teaspoon vanilla extract
1 cup coffee
¾ cup orange juice
Directions:
Preheat oven to 350º
Place parchment paper on a pan or grease a pan and dust it with flour (an angel food cake pan is preferred).
In a large mixing bowl combine the flour, baking soda, baking powder, cinnamon, ground cloves, allspice, and salt. Combine.
After combining, add the eggs, oil, honey, vanilla extract, coffee, white sugar, brown sugar, and orange juice. Mix together until all the ingredients are combined (BE CAREFUL TO NOT OVERMIX!)
Bake for 60 minutes or until a toothpick inserted into the center of the cake comes out clean.
Allow the cake to rest in the pan for an additional 10 minutes before removing it from the pan.
Take a butter knife and run it around the edges of the pan and then turn it over on a metal rack (only if you used an angel food cake pan. If used a different pan with parchment paper just simply remove the parchment paper and put it on a metal rack to finish cooling)
