Since before I can remember, my mom made these zebra cookies every year on Pesach. I now associate these cookies with the holiday of Pesach, as they have become part of our familial tradition. The recipe is simple, and I hope you guys enjoy them as much as I do!
Ingredients
1/2 cup vegetable oil
2 cups sugar
2 cups matzoh meal
1 cup cocoa
4 eggs
1 tsp vanilla
2 tsp baking powder
Confectioners sugar
Directions
Preheat oven to 350
Line 2 cookie sheets with parchment paper
In the bowl of an electric mixer, combine all ingredients
Mix until soft dough forms
Roll into 18 balls
Pour confectioners sugar into a small bowl or plate
Roll the balls in confectioners sugar until coated
Transfer to cookie sheet
Bake at 350 for 18 min
Cool completely
Freezes well
